Most cars will allow you to run the AC and the heat at the same time. Why aren't houses the same?

Depends on the house. If your only source of A/C and heat is a single heat pump, you can't, but if you otherwise have a separate furnace and A/C unit, you can totally wire them up to run like this for humidity control.

@Christmas_Man I have heat pump but also backup heat (electrical I think).

Nah it's already way to dry when I have to run the heat. I want the air to go through the AC, then through the heater, then the humidifier, and finally out of the vent.
